It’s important to recognise that genetic progress is the long-game in any beef breeding enterprise. Breeders won’t improve short-term profitability by ramping up their spend at a bull sale.
Star Performance for Commercial Cattle
Stellar bulls have had the works thrown at them. From conception to sale, we collect and submit every piece of data we can.
Sale bulls are independently assessed for structure and vet checked for fertility.
Our parasite management program insures all our animals endure no setbacks and drench resistance is carefully managed.
Sale bulls are vaccinated for BVDV (pestivirus) and Vibriosis as well as the usual 7-in-1 innoculation.
We maintain a high standard of performance recording of all cattle.
All bulls are vet checked, vaccinated and screened for BVDV PIs.
Our entire herd has genomic predictions underpinning EBVs.
Bulls are guaranteed fit and post-sale support is a high priority.
Much of Stellar Livestock operates on property first purchased by the family in the 1870s.
Julian Carroll founded the seedstock business as Black Star Angus in 2011. However, the family's involvement in the Angus breed goes back to the 1930s.
Stephen and Kathryn Carroll joined Julian and Sally in 2022 in the re-branded Stellar Livestock.

Maternal efficiency is all about making sure a breeding enterprise is economical. In a self replacing herd, it’s estimated that 75% of the grass grown goes toward maintaining the cow herd. That only leaves us with a quarter of our pasture productivity to produce a saleable product.
